Anthocyanin Anthocyanin is a water-soluble pigment group found in a large number of fruits, vegetables and flowers. These are the pigments which give plants their brilliant colors ranging from pink through scarlet, purple and blue. Some pharmaceutical effects of anthocyanins have been suggested, for example in treatment of cardiovascular diseases and in ophtamology. The antioxidant potentials of anthocyanins are high.

Carotenoids (also referred to as carotenes) are a group of more than 600 highly colored plant compounds; however, only 14 have been identified in human blood and tissue.The most prevalent carotenoids in North American diets include alpha-carotene, beta-carotene, lycopene, lutein, zeaxanthin, and -cryptoxanthin. Only three (-carotene, -carotene, and -cryptoxanthin) are converted to vitamin A and considered provitamin A carotenoids.
