What does the ORAC assay actually measure?
The original ORAC assay is primarily for water-soluble antioxidant activity against the peroxyl radicals. Recently we expanded the ORAC method to incorporate fat-soluble antioxidant activity. Soon thereafter, we introduced the hydroxyl radical in the ORAC assay panel.
